Taco Casserole: A delicious meal made with leftover taco ingredients.
This spur of the moment meal was such a hit with my family that I decided to post it here.
A couple of nights ago, we had tacos using the following ingredients:
- ground beef (prepared per taco spice package)
- diced peppers
- diced tomatoes
- chopped onions
- grated cheddar cheese
They were delicious, but I was left with quite a bit of each ingredient in the list left over and pondered what to make with these ingredients for the next night’s meal. I thought of one of our other favorites – Taco Salad – but that wouldn’t be possible because I had no lettuce. We did, however, have some tortilla chips.
Then I thought, “Why don’t I just layer the ingredients in a casserole dish and bake?
Here’s what I finally did (all measurements are approximate and can be altered according to taste and what is available).
Preheat oven to 350 degrees.
- 3 cups taco beef mixture
- 3/4 cup diced peppers
- 1/2 cup onions
- 1 cup tomatoes
- 1 1/2 cups salsa
- 3/4 cup corn
Layer on the bottom of a deep casserole dish.
Spread over meat layer:
- 1/2 bag tortilla chips (broken into sizable pieces)
Place in preheated oven and cook approximately 25 minutes. I did not cover the pan because I was concerned that the chips would become soft from the wet ingredients.
Remove the casserole from the oven and spread:
- 1 cup grated cheddar cheese
I then placed it back in the oven until the cheese was melted and bubbly.
